Baltimore Bomb pie is a gooey vanilla chess pie with melted Berger cookies swirled in.
Berger cookies have been a staple for the people of Baltimore for more than 75 years and the inspiration a local pie shop took to originally create this pie. Although I couldn’t figure out their exact recipe, this indulgent delight is pretty close.
Baltimore Bomb Pie Recipe
Prep Time: 35 minutes (cookies and pie combined)
Baking Time: 55 minutes (Cookies and pie combined)
Total Time: 1 hour 30 minutes
Cooling Time: 1-2 hours or overnight (cookies)
Makes: 8 slices
Pie Ingredients:
18 Berger cookies *
1 unbaked deep-dish pie crust
½ C sweet cream butter (soft)
½ C granulated sugar
3 large eggs
1 Tbsp cornmeal
1 Tbsp vinegar
1 tsp pure vanilla extract
Pie Directions:
Preheat oven to 350 degrees.
Chop up Berger cookies. Placing them in a large bowl.
Transfer the chopped cookies into the pie crust.
Add butter, sugar, eggs, and cornmeal in a medium bowl.
Whisk to combine these ingredients together.
Carefully pour the wet mixture over the cookies.
Use a rubber spatula to gently stir to coat all of the cookie pieces. Bake at 350 degrees for 35-40 minutes. (Or until it is golden brown on the top.)
Berger Cookie Ingredients:
1 ¼ C flour
½ tsp baking soda
½ tsp salt
⅓ C buttermilk
½ tsp pure vanilla extract
⅓ C unsalted butter (softened)
½ C granulated sugar
1 large egg
Frosting Ingredients:
2 C semi-sweet chocolate chips
½ C heavy whipping cream
Directions:
Preheat oven to 350 degrees.
Prep cookie sheet with a silicone sheet
Cookies:
Add flour, baking soda, salt, buttermilk, vanilla, butter, sugar, and egg in a large mixing bowl. Use a whisk to combine these ingredients together.
Measure the dough out with a medium-size ice cream scoop, placing them on a prepared cookie sheet.
Bake at 350 degrees for 13-15 minutes. (Until the edges of the cookies are golden brown,) Allow the cookies to cool for 5 minutes while on the cookie sheet.
Transfer the cookies to a wire rack to cool completely.
Frosting:
Add the heavy whipping cream and the chocolate chips into a medium microwave-safe bowl. Microwave for 30-second segments, stir directly after, repeat until all of the chocolate chips are melted.
Stir to smooth the chocolate mixture.
Use an offset spatula to spread this on the top of the cookies.
Set aside to allow the frosted cookies to cool, either for several hours or overnight.
