Blackberry Cocktail Recipe

1 cup Spiced rum
1 cup Cointreau
1 cup Blackberry Brandy
2 cups Pomegranate Juice
1 cup Berry Juice
1 cup Pineapple Juice
3 cups of fresh blackberries and strawberries
A few sprigs of fresh thyme, lime wedges, blackberries, and strawberries as garnish.
Tajin or sugar rim on glasses

Pour the rum, pomegranate juice, pineapple juice, berry juice, Cointreau, and blackberry brandy into a large pitcher.
Add the fresh berries.
Stir to mix.
Fill the glasses with ice 1⁄2 way full.
Pour your cocktail mixture into the glasses.
Top with a few fresh berries, limes, or a sprig of fresh thyme before serving.

  • 2 lbs boneless, skinless chicken breasts or thighs, cut into cubes
  • 8-10 medium potatoes, cut into 1/2-inch cubes
  • 1/3 cup olive oil
  • 1 1/2 tsp. salt
  • 1 TBS. ground pepper
  • 1 TBS. paprika
  • 2 TBS. garlic powder
  • 6 TBS. Frank's hot sauce
  • 2 c. CoJack cheese
  • 1 c. Cooked bacon, crumbled
  • 1 c diced green onion


  1. Preheat oven to 400F
  2. In a large bowl, mix together the olive oil, salt, pepper, paprika, garlic powder & hot sauce.
  3. Add the cubed potatoes and stir to coat. Put the potatoes into a coated 9 x 13 inch baking dish, leaving behind the olive oil/hot sauce mix.
  4. Bake the potatoes for 45-50 minutes, stirring every 15 minutes, until cooked through and crispy & browned on the outside.
  5. While the potatoes are cooking, add the cubed chicken to the bowl with the leftover olive oil/hot sauce mix and stir to coat.
  6. Once the potatoes are fully cooked, remove from the oven and lower the oven temperature to 400F. Top the cooked potatoes with the raw marinated chicken.
  7. In a bowl, mix together the cheese, bacon & green onion and top the raw chicken with the cheese mix.
  8. Return the casserole to the oven and bake for 15 minutes or until the chicken is cooked through and the topping is bubbly delicious.
