It’s been a while since I’ve done a cocktail recipe here, so I thought in honor of the 4th of July I should go ahead and publish a new one. Here in Oregon, we are out picking blueberries right now. We have tons of u-pick farms all around us. So, with an abundance of blueberries to use up this Blueberry Moscow mule was born! I hope you enjoy it as much as I did.

Blueberry Moscow Mule Ingredients:

1 Cup Ginger beer
1oz Vodka
1oz of Gold Tequila
Juice 1/2 of a lime
Blueberry Syrup
Fresh Blueberries
Mint 

Blueberry Syrup 
1 cup washed blueberries
1/4 cup water
1 Tbsp. sugar

Directions:
Pour the ginger beer, tequila, vodka and lime juice in a copper cup
Stir to combine
Add in the ice to full
Now pour a tablespoon of blueberry syrup on the top and fresh berries
Stir and garnish with blueberries and mint

Blueberry Syrup 
1 cup fresh blueberries
1/4 cup water
1 tablespoon sugar

Directions:
Add all ingredients into a small saucepan
Bring the ingredients to a boil for 5 minutes, then let it simmer for 10 minutes till it becomes thick
Set to the side for 30 minutes to chill
Strain over a glass bowl and let it cool
Cover and save in the refrigerator for up to one week
