I’m always looking for something easy to make that the kids will actually eat. When they were little they would literally eat anything. As they have gotten older they have refused to eat more and more stuff. It’s been really frustrating. No one wants to make dinner only to have everyone refuse to eat it. After basically taking a break from cooking, I started to try new recipes in hopes I could find a few things they would eat.

Some recipes have certainly been more successful than others. This casserole recipe was well-received by all three children. I probably should have named it miracle casserole! I created it with ingredients I already have on hand potatoes, chicken, co-jack cheese, and Frank’s Hot Sauce! I always have hot sauce on hand to make Buffalo Chicken wing dip and I always have co-jack because I use it in all the Tex-Mex food I make. 

Buffalo chicken casserole is an easy recipe to make and delicious. It’s filling and it even has a bit of a kick thanks to the hot sauce!

Buffalo Chicken Casserole

Ingredients:

2 lbs boneless, skinless chicken breasts or thighs, cut into cubes
8-10 medium potatoes, cut into 1/2-inch cubes
1/3 cup olive oil
1 1/2 tsp. salt
1 TBS. ground pepper
1 TBS. paprika
2 TBS. garlic powder
6 TBS. Frank’s hot sauce

Topping:

2 c. CoJack cheese
1 c. Cooked bacon, crumbled
1 c diced green onion

Directions:

Preheat oven to 400F

In a large bowl, mix together the olive oil, salt, pepper, paprika, garlic powder & hot sauce.

Add the cubed potatoes and stir to coat. Put the potatoes into a coated 9 x 13-inch baking dish, leaving behind the olive oil/hot sauce mix.

Bake the potatoes for 45-50 minutes, stirring every 15 minutes, until cooked through and crispy & browned on the outside.

While the potatoes are cooking, add the cubed chicken to the bowl with the leftover olive oil/hot sauce mix and stir to coat.

Once the potatoes are fully cooked, remove them from the oven and lower the oven temperature to 400F. Top the cooked potatoes with the raw marinated chicken.

In a bowl, mix together the cheese, bacon & green onion, and top the raw chicken with the cheese mix. Return the casserole to the oven and bake for 15 minutes or until the chicken is cooked through and the topping is bubbly delicious.

Serve with extra hot sauce or ranch dressing.

Optional Ingredients:

There are a lot of different ways you could change this casserole up.

You could substitute cauliflower for chicken to make a vegetarian version. If you really like onions you could add onions to the chicken. You could also add mushrooms, corn, or bell peppers.
