img 2215This year I’ve been on a diet the last half of the year, but I must say I am looking forward to indulging a little here and there during the holidays.

One of my favorite things to indulge in is baked brie. Here is an amazing recipe for Caramel Pecan Baked Brie with Kahlua originally published on Annie B’s Popcorn & Caramel blog – A Sweet A Salt.

It’s a combination of all my favorite things: brie, pecans, caramel, & Kahlua! I couldn’t decide if this was an appetizer or dessert. I eat it like it’s dessert.

Mouthwatering was the first word that came to mind when I saw Amanda Henke’s (owner of Annie B’s Popcorn & Caramel) Caramel Pecan Baked Brie with Kahlua. I mean really, what’s not to love about warm brie, melted caramel mixed with Kahlua and combined with the slight crunch of flavorful pecans? It’s perfect for a holiday cocktail party or a unique appetizer for New Year’s Eve. The best part is this recipe only requires a few ingredients and a super easy assembly. I am all about simple easy recipes, especially during what is often the busiest time of year.

Caramel Pecan Baked Brie with Kahlua

1 refrigerated or homemade 9” pastry crust

1 – 13 to 17 ounce brie wheel

4 ounces Annie B’s Baking Caramel (1/4 block)

3 to 4 tablespoons Kahlua liqueur

1 cup pecans

1 egg

1 tablespoon water

Leave pastry crust at room temperature until it unrolls easily. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper or silicone mat.

Depending on the size of the brie wheel, you may need to roll pastry crust to a larger size. Roll from the center out so that crust is large enough to meet in the center when folded around cheese wheel.

Place pastry on a prepared pan. Place unwrapped Brie wheel in center of pastry.

Melt caramel in the microwave in 15 second increments until melted and smooth. Stir in Kahlua until well combined. Fold in pecans. Spread on top of cheese wheel.

Bring up pastry over the top of the cheese wheel, pleating crust as you go. Beat egg and water in small bowl. Brush surface and sides with egg wash.

Bake for 20-30 minutes until pastry is golden brown. Let sit for 5-10 minutes before serving. Transfer to serving dish or platter and serve warm with mild flavored crackers.

Annie B’s has a 30 year tradition of making delicious handcrafted caramels and popcorn. Each individually wrapped caramel is made using simple, local ingredients like brown sugar, water, corn starch, butter, corn syrup, sweetened condensed milk, inverted sugar and natural flavor. The result is absolutely scrumptious caramels. Annie B’s caramel is slow cooked in copper pots through small-batch cooking. Each piece is handcrafted with the exception of cutting and wrapping of the caramels. Annie B’s Caramels are all-natural and gluten-free.
