Carrot Cake Sheet Cake with Salted Caramel Sauce

Ingredients: 
  • 2 C flour 
  • 2 C sugar
  • 2 tsp ground cinnamon 
  • ½ tsp kosher salt 
  • 2 tsp baking powder 
  • ½ tsp baking soda
  • 3 C shredded carrots, 
  • 4 large eggs
  • ¾ C canola oil
  • 2 tsp pure vanilla extract 
  • 1 ½ C chopped walnuts 
Frosting ingredients:
  • 1/2 C unsalted sweet cream butter, softened
  • 1 – 8 ounces cream cheese, softened
  • 4 C powdered sugar
  • 2 tsp pure vanilla extract
  • 1 – 8oz jar of Salted Caramel Sauce
  • 1 disposable piping bag
Cake Directions:
 
Preheat the oven to 350 degrees and spray a 9×13 baking dish with pam baking spray.
 
In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt until combined.
 
Using a large bowl, beat together the eggs, oil, and vanilla until combined.
 
Gradually beat in the dry ingredients until combined.
 
Fold in the shredded carrots and chopped walnuts.
 
Pour the batter into the baking dish and bake in the oven for 30-40 minutes or until a toothpick comes out clean.
 
Allow to cool while you make the frosting. 
 
 
Frosting Directions:
Using a standing mixer, beat all ingredients, except the caramel sauce, until combined and smooth.
 
Spread the frosting onto the sheet cake and smooth it evenly.
 
Pour the caramel sauce into the piping bag. Cut the tip off the piping bag and pipe some lines going horizontal on the cake.
 
Using a butter knife, or a toothpick, gently drag the end through the caramel lines going up and down once you reach the end of the frosting to create a zigzag look.
 
Cut and serve.
