The Case Ole green dip is so good and they seem to be the only ones making it. This dip is one of the things I miss the most about Texas. This should give you a solid idea of how awesome this dip is. So, imagine my delight when my friend Melanie told me she had the recipe! (I almost cried.) I didn’t want to get my hopes up too high, but when you live in Oregon and you grew up on Tex-Mex……….
I made the dip and it was good! My Oregon friends suggested I bottle it and sell it!
This copy cat recipe has to be close to the exact recipe, if not their exact recipe. Mine was quite a bit thicker than what they serve, but I wasn’t sure how to go about thinning it. It was thick enough to hold my chip up. Feel free to leave a suggestion on how to thin dip.

delicious!!!
I don’t know. I’ve never been there. Where do they have restaurants?
I live in Odessa, Texas and Casa Ole is our go-to restaurant for Mexican food. I have been in love with their green sauce for 35 years. I’m making this tonight :)
I’m from Odessa!
I’m from Odessa to lol
Add more water like 1 and half cups and it will be perfect
Does this taste anything like jalapeno tree green sauce? Also it seems like adding the rotels would make out turn red
I have never had jalapeno tree green sauce, so I am unsure. Adding Rotel does not turn in read. It tuns out the same exact color in the photos.
Our daughter, Ellen made this for a family dinner. It is delicious. I’m so pleased they enjoy entertaining. True hospitality is a Gift.
Her Mom
When my brother was in the hospital my niece and I went down to college station Texas and ate at the restaurant the green sauce dip was awesome however I have not been able to find the recipe I also emailed the restaurant and never got a response back I hope this comes close to how it tasted
I make this regularly. Everyone in the family loves it. Says it’s better than the original. I do not add any water and sometimes use more avocado than called for. It’s delicious!
Can you make this ahead or does it turn brown
Yes, you can make it ahead, but you will want to put a layer of water on top of it and cover with saran wrap. Then when you are ready to serve just pour off the water ad it will look fine.
Thank you I can’t wait to try it
How much does this make, will be enough to take to a party?
It makes a large bowl. You could half the recipe and it would still be more than enough for a party.
