We’ve been getting HelloFresh every week now for at least half a year. There are many things I love about it. It’s convenient, it’s so easy the kids can cook, and they always seem to be delicious.

One of the things I struggle with is replicating the recipes where they use an unknown sauce or special seasoning blend. After doing some digging all over the internet and testing I feel like I’ve figured these out. Thankfully HelloFresh tends to publish their spice recipes on their Facebook page or Twitter pages occasionally. There is even a HelloFresh Reddit thread where I found some.

HelloFresh Sauce Recipes
First, we will start with the only sauce recipe I’ve managed to find and think is correct. The cream sauce is used in tons of their pasta recipes.
HelloFresh Cream Sauce Base
Ingredients:
- 1-1/2 oz (3 Tbsp) unsalted butter
- 3 Tbsp unbleached all-purpose flour
- 1-3/4 cups whole milk, heated
- 1/2 tsp kosher salt
- 1/8 tsp freshly ground black pepper
- Small pinch of freshly grated nutmeg
Directions:
Melt the butter and then add the milk. Heat it up and stir in the flour and seasonings.
Continue to heat up on medium until thickened, be sure to whisk quite a bit while it thickens. Add additional flour if you need to thicken it.
This makes enough for the four servings portion and it is what you use in their Oven Gold chicken Sausage Gnocchi Bake and the Chicken Sausage Rigatoni Napoletano.
Roasted Red Pepper-Cashew Pesto
Ingredients
- 3/4 Cup Roasted Red Peppers (from a jar)
- 1/4 Cup Olive Oil
- Salt, to taste
- 1/4 Cup Unsalted Cashews
- Juice of 1 Lemon
- Red Chili Flakes, to taste
- Parmesan Cheese, to taste
Directions:
Add roasted red peppers, olive oil, and a pinch of salt into a food processor. Pulse until the ingredients are combined but not totally smooth.
Roughly chop cashews. Add to a food processor and blend. Add more olive oil if it is too thick.
Squeeze in lemon juice and sprinkle in red chili flakes (to taste).
Grate in Parmesan and stir to combine.
Sweet Soy Glaze
Ingredients:
- 1 cup soy sauce
- 1 tablespoon honey
- 1 teaspoon rice vinegar
- 1/2 teaspoon brown sugar
- 1/4 teaspoon ground ginger
- 1 tablespoon cornstarch
- 1/8 teaspoon salt

Next up are the spices. I’ve managed to find tons of these so far. As I figure out more I will add them to this list. If you think any of them might be wrong send me a message. If you’ve managed to get your hands on one of the other spice recipes please leave it in the comments below.
When deciding how much a part is you need to decide how much you need. One part could be 1 tsp which means .5 part is 1/2 a tsp. If you want to make a lot at once you may want to do one part as a tbsp instead.
Tuscan Heat Spice Blend
- 4 tsp Basil (dried flakes)
- 2 tsp Rosemary (dried flakes)
- 2 tsp Oregano (dried flakes)
- 2 tsp Garlic Powder
- 1 tsp cayenne pepper
- 1 tsp Fennel (ground)
I made this with too much cayenne and our pasta was hot as hell. So, don’t measure incorrectly. This makes enough for what is called for in most of their recipes. Here’s a picture of the pasta I made. It’s the bubbly tortelli bake.
Sweet and Smokey BBQ Seasoning
- 8 parts smoked paprika
- 6 parts granulated sugar
- 2 parts garlic powder
- 0.5 (half) parts black pepper
- 1 part dry mustard
- 1 part ground cumin
- 1 part ground ginger
Fall Spice Blend
- 3 parts dried thyme
- 3 parts ground sage
- 2 parts garlic powder
- 1 part onion powder
Southwest Spice Blend
Seems like the southwest spice blend is one of the most popular spices they have, yet the simplest of them all!
- 4 part garlic powder
- 2 part cumin
- 2 part chili powder
Shawarma Spice Blend
- 2 part turmeric
- 2 part cumin
- 1 part dried coriander
- 1 part garlic powder
- 1 part paprika
- .5 part ground allspice
- .5 part black pepper
Turkish Spice Blend
- 2 part cumin
- 2 part garlic powder
- 1 part ground coriander
- .25 part ground allspice
- .25 part chili flakes
Cajun Spice Blend
- 2 part paprika
- 2 part onion powder
- 1 part garlic powder
- 1 part dried oregano
- 1 part dried thyme
- .5 part dried basil
- .5 part cayenne
Berbere Spice Blend
- 3 part paprika
- 1 part cayenne
- .5 part ground coriander
- .25 part ground ginger
- .125 part ground cardamom
- .125 part ground fenugreek
Fry Seasoning
- 1 part garlic powder
- 1 part onion powder
- 1 part paprika
Meatloaf Seasoning
- 2 parts onion powder
- 2 parts garlic powder
Tunisian Spice Blend
- 4 parts ground caraway seed
- 4 parts ground coriander
- 4 parts smoked paprika
- 4 parts turmeric
- 4 parts chili powder
- 4 parts garlic powder
- 1 part cayenne pepper
- 1 part cinnamon
- 1 part ground black pepper
Blackening Spice Blend
- 3 parts smoked paprika
- 1.5 parts paprika
- 1.5 parts onion powder
- 1 parts garlic powder
- 1/2 part white pepper
- 1/2 part black pepper
- 1/4 part thyme
- 1/4 part Oregano
- 1/8 part “low-heat” cayenne pepper

Would you help me with the amount of spicesblends?? I understand tablespoon teaspoon etc but I’m no sure if parts. For example 3 parts. Is that 3 tablespoons????
Depends on how much you want to make. If you only want a little then do it as 1 part = 1 tsp.

We’re looking for the “cream sauce spice blend” from Hello Fresh, it comes as a 2 tbsp pouch of white powder. Wondered if it was partly cornstarch to thicken the sauce?
Also we’d like the “gravy spice blend” from their “Chalet Style Chicken Dinner with Shallot Gravy and Creamy Mash” meal.
