My cousin made this spicy chicken spaghetti one year at our family reunion and everyone went crazy for it. Nowadays at my house, Spicy Chicken Spaghetti is a staple. All three of my kids love it and it is super easy to make. I mean like so freaking easy your kids could make it with little to no help from you. I do consider this to be Tex-Mex food because of the Rotel being added in. The Rotel original gives it a nice kick. If you want to go for full flavor, but keep it less spicy buy the mild Rotel instead of the original Rotel.
Spicy Chicken Spaghetti
12 – 16 oz angel hair pasta
1 can Rotel original undrained
1 can cream of chicken
1 can cream of mushroom
12.5-ounce can chicken
8 oz sour cream
1/2 cup diced onions (optional)
1/2 cup sliced mushrooms (optional)
Parmesan or Cojack cheese
Boil the angel hair pasta and drain.
Then add all the ingredients except the cheese.
Once well blended, pour into a baking dish and bake covered with foil at 350 degrees for 30 minutes.
