This Tex-Mex white chicken chili is so yummy. I love white chicken chili and prefer it over regular chili. But for some reason, it took a while before I had a good recipe. I got this from our squadron commander’s wife a few assignments ago and it is absolutely delicious. Enjoy!
White Chicken Chili Recipe
Ingredients:
1 lb chicken
1 medium onion chopped
2 cans Navy Beans
2 cans Northern Beans
1 can Rotel with chilies
1 can chicken broth
1 tsp salt
1/2 tsp pepper
1 tsp chili powder
1 1/2 tsp garlic powder
1 cup sour cream
1 pint whipping cream
Directions:
Boil the chicken and shred it.
Add in most of the ingredients: beans, chilies, chicken broth, seasonings, and onion.
Simmer for 30 minutes.
Remove from heat.
Add 1 cup sour cream and 1-pint whipping cream.
Optional Toppings:
Bacon bits
Cheese
Green Onions
Substitutions:
If you do not want to use chicken you can sub tempeh.
If you cannot find Navy beans you can substitute cannellini beans.
